Review: esta excelente 1. The Visual Contrast (What the Chef sees) Imagine a pristine, shiny white round plate: The Base (The Mash): A smooth, creamy bed of mashed potatoes. It has a soft ivory hue (not stark white) due to the butter and the roasted garlic mixed in. It looks silky, not dry. The Protein (The Paupiette): Resting on the mash are 2 or 3 slices of the chicken roll, cut diagonally. Exterior: Golden-brown and crispy because you seared it in the pan after poaching. Interior: You can see the spiral of white chicken meat holding the stuffing of dried fruits and cranberries. The Sauce (Espagnole): This is the "wow" factor. A dark, glossy, deep brown sauce flows over half of the chicken slices and pools slightly onto the plate. The contrast of the dark brown sauce against the light creamy potatoes looks very elegant and classic.
